New bakery and cafe coming to vacant western Lawrence building

A new family-owned bakery and cafe is coming to west Lawrence in spring 2026.

Lacey Dye, alongside her father Donald Greenfield, is fulfilling her lifelong dream of owning a bakery. They’re set to open Roosters Bakery & Cafe at 3520 W. Sixth St., which previously housed sports bar Henry T’s.

Greenfield also owns and operates Westridge Wash & Lube next door at 3530 W. Sixth St. 

“We think it is a great spot for a locally-owned drive thru bakery with lots of traffic from 6th Street,” Dye said in a message.

Construction began this month. In addition to a drive-thru lane, dine-in and outdoor patio seating will be available.

A fifth generation Lawrence graduate, Dye said she and her father wanted to pay homage to their family, particularly Donald “Rooster” Dicker. The Dicker family previously owned a grocery store in North Lawrence.

Dye’s ancestry includes more than a century of farming wheat and cattle in central Kansas, she said.

Roosters Bakery & Cafe will use Hudson Cream flour from Stafford County Flour Mills Company for its baked goods and source coffee from Kansas City-based Messenger Coffee. They’ll offer breakfast and lunch.

An experienced baker, Dye first learned as a child from her grandmother and then taught herself to bake and decorate cakes through high school. She attended Johnson County Community College for hospitality management and pastry school. 

“Opening a locally-owned small business has proven to be challenging thus far, but we are excited for our new adventure and to serve the Lawrence community,” Dye said.
