Taco-loving Lawrencians have a new place to satisfy their cravings.
El Jimador, a Mexican restaurant and bar, is now open seven days a week at 601 Kasold Drive.
With hopes of creating a new family favorite, the Devoras — Jennifer and her father, Fernando, and sister, Karen — have dreamed of entering the array of Mexican restaurants in town for years.
“I feel like every (Mexican) location has a little piece of its own that it wants to share,” Jennifer Devora said. “I feel like there is enough of our culture that we can all bring a little something to the table.”
The family-owned business specializes in street tacos, Jennifer said.
The Hawaiian fajitas, which include mango and pineapple, are also popular. And the jimador burrito and fajita jimador are packed with meat — chicken, steak, chorizo and shrimp.
The Jimador special is chicken, steak, shrimp, chorizo, cheese and “cactus in a hot lava rock with chipotle diabla sauce.” Other highlights include signature bacon nachos, barbecue nachos and quesa birria tacos.
Offering mammoth margaritas and mojitos with a twist — mojitaritas — El Jimador has a full bar.

“We try to make them as Mexican as possible, you know, to bring a little piece from home and share it here with you guys,” Jennifer said.
El Jimador is open from 11 a.m. to 10 p.m. on weekdays, and 11 a.m. to 10:30 p.m. Fridays, Saturdays and Sundays.
“We are just so excited and happy to be able to bring a little piece of our culture here in town,” Jennifer said. “We try to make it as authentic as possible, to bring that true Mexican culture to you.”
