Haskell Greenhouse invites community to harvest sunchokes, join soup workshop

The Haskell Indian Nations University Greenhouse will host a sunchoke harvest and soup-making workshop open to the community.

Sunchokes are vegetables in season from fall to spring.

“Sunchokes are one of Kansas’ native potatoes,” Haskell Greenhouse Manager Courtney King said in event information. “Their tuber roots are delicious and high in fiber and probiotics. Tribes have eaten them as food for thousands of years.”

King will guide a harvest at 1 p.m. Saturday, Nov. 8 at Haskell Cultural Center and Museum, 2411 Barker Ave. Tools will be provided, but participants can bring their own, too. Organizers recommend preparing for cold weather and bringing a personal water bottle.

Register for the harvest at this link. As of Tuesday afternoon, there were nine spots remaining, but people are still welcome to attend, learn and connect if registration fills up.

At 1 p.m. Sunday, Nov. 9, King will lead a workshop on making soup with the sunchokes harvested the previous day. Cooking will take place over an open flame on the back porch of Stidham Union on campus, and the union will also be available for fellowship.

Register for the workshop at this link. As of Tuesday afternoon, there were 24 seats remaining. If the registration fills up, folks are still welcome to attend but won’t participate directly in cooking.

Both events are in partnership with the Lawrence Public Library.
